Wild Huckleberry Elixir
Move over blueberries, there is another powerhouse of a berry found right here in the forests and mountainsides of the Pacific Northwest. Research has proven antioxidants play an important role in human health. Studies have compared the antioxidant levels of different berries and found our wild blue huckleberries (Vaccinium ovatum) to be considerably higher in antioxidants than the common commercially grown blueberries.
In late summer and autumn, instead of just harvesting these tiny berries for jams and baked goods, I collected them to make an antioxidant rich elixir.
Our tiny Whidbey Island Wild Blue Huckleberries are picked, sorted, cleaned, mashed and tinctured in organic vodka for a full month. After straining, the deep hued liquid is sweetened and softened with ginger infused organic honey. The result is a rather delicious and beautiful elixir.
