When life hands me lemons, I make lemonade….ummmm….actually I make lemon curd! Fresh lemon curd is the best! Enjoy it on english muffins, angel food cake, fresh gingerbread, and scones, of course! This recipe makes a large amount, so use it lavishly and share. We make our lemon curd in the microwave rather than on the stove top; quick and easy!
5 large eggs
1 cup sugar
2/3 cup fresh squeezed lemon juice
zest of one or two lemons (if you want to take the time)
1 cube unsalted butter
Equipment:
Food processor or blender
Small microwave safe bowl or cup
Large pyrex/glass mixing bowl
Whisk
Microwave (Yes!)
Into blender put eggs, sugar, lemon juice and zest. Blend together for 30 seconds. Melt butter in small bowl in microwave. With blender running gradually pour in melted butter. Pour mixture into large pyrex bowl and place in microwave. Cook on high for 3 minutes. Whisk well. Continue cooking on high for 3 to 5 minutes, but stop every 30 seconds and whisk. Each microwave is a little different, but you want your lemon curd to be thick, but smooth and creamy. When you plop a spoonful on top, it should like the photo below.
Pour your fresh curd into clean containers, refrigerate and enjoy! Stays fresh and yummy for one week. Oh! I almost forgot! Lemon curd is absolutely grand on fresh, spring strawberries!
